This is the story of Giacomo Grassi and his farm, a journey rooted in an ancient family tradition and projected toward modern and sustainable agriculture.

 

 

It all began with “Le Case,” the original estate managed by Giacomo’s parents, Rolando and Elena, under the sharecropping system, a practice that once shaped rural life in Tuscany. The olive grove, situated at about 450 meters above sea level, already produced high-quality oil at that time, free of chemical products and the result of natural and meticulous cultivation, which preserved a deep respect for the land.

Over the years, the farm evolved and expanded, reclaiming old olive groves and vineyards, turning them into specialized crops, and focusing on native varieties for both olives and vines.

This attention to biodiversity, combined with a conscious approach to land management, has made “Giacomo Grassi” a benchmark for quality and respect for nature.

The farm is renowned for producing single-variety oils from Tuscan native varieties, studying as many as 16 different types. The commitment to quality and the search for new varieties continues today, with an approach that blends tradition with experimentation.

The philosophy of the farm is rooted in a deep respect for nature, which is seen as both a gift and an opportunity. In an increasingly fast and globalized world, the decision to cultivate ancient varieties and rediscover local traditions becomes an act of cultural resistance. Behind every bottle of oil, wine, vinsanto, or grappa, one can sense the care and dedication of those who have chosen to preserve the authentic flavors of the land without forgoing change and constant innovation.

Today, the farm remains a beacon in the world of high-quality olive growing, recognized nationally and internationally. Each olive harvested tells a story, shaped by ancient gestures and cutting-edge techniques, by skilled hands and continuous research.
